Let's Talk Lunch...

There's much to see here. Take your time and look around. I am not a gourmet chef by any means! I am a busy mom of 3 kids, trying to balance work and home life. I promise my recipes are all about keeping it simple. They don't always appeal to everyone in my house so try them out and see what works for yours. 

The Big Salad

My go to lunch is always a super-salad!  Salads are easy to assemble and are fresh, delicious, and nutrient-filled!  They can be made in just minutes if you do a little prep work in advance.  You can chop your veggies in bulk and keep them in sealed glass containers in your fridge.  Think about adding a variety of color.  The more vegetables the better! Put the protein and dressing in separate containers.  Your salad needs a satisfying serving of protein so please don’t skimp there!  You can use the palm of your hand as a judge to ensure you are getting a 4-6 oz protein of your choice.  I have included my favorite salad combo here but you have full creative license to mix and match your favorites to avoid boredom.  Enjoy! 


Steps to Create the Perfect Big Salad:

  1. Pick your base- spinach, arugula, kale, shredded cabbage, romaine
  2. Add a healthy fat or two- avocado, nuts, seeds
  3. Add some color- think of a veggie from every color of the rainbow
  4. Craving some healthy extras?  Try adding your favorite fruit in season.
  5. Dress it up- be cautious if you are buying a bottled dressing.  Check your ingredients for hidden sugar and vegetable oils.  I like to make my own with olive oil, vinegar,and spices.
